A working conference for plant technologists and bakery operations managers. Focused on technology that can actually be rolled out on the production floor: fermentation control, sourdough handling, automation, quality control, and line-extension strategies. Speakers are working technologists from Kolomensky, Pishcheprompodukt, and the Baking Industry Research Institute. Format splits 50/50 between technical talks and discussion/networking.
