A properly organized proofing process ensures the formation of a porous dough structure and restores the gluten network of the dough pieces. The surface layer of the dough pieces becomes gas-impermeable, smooth, and elastic.
The humidification and heating (climate control) system in the machine’s working area allows for the creation and maintenance of the necessary temperature and humidity parameters.
Protective covers enclose all moving and rotating parts. Access to internal mechanical components is provided for scheduled maintenance.
